An approximate eating plan for pancreatitis of the pancreas, what you can and cannot eat

First, let's talk about diet for acute pancreatitis. You should not eat anything immediately after an exacerbation and for the next two days. We are only allowed five or six glasses of mineral water. The regeneration of the organ occurs due to the fact that gastric and pancreatic juices are not secreted.

However, on the third day, you can consume liquid unsalted foods high in carbohydrates. Wheat crackers, soups with vegetables and cereals with a weak broth are allowed. After that, you can enter steam omelets, turkey fillets, chicken and lean fish.

On the fifth day, the calorie content increases to 700-800 kcal, of which 200 g are carbohydrates, 15 g are proteins. Fats are introduced between the sixth and ninth days.

The menu during this time should look like this:

  • We have breakfast with rice porridge without milk, tea with sugar, orange (apple);
  • Snack on mashed carrots (mashed potatoes), boiled low-fat fish or chicken (50 g), rosehip broth;
  • 150 g of broth (vegetables), 30 g of boiled fish (veal), apple puree, mashed potatoes for lunch;
  • Second snack. 50 g of cottage cheese (0-2%) with sugar, sweet tea;
  • Instead of dinner - a spoonful of honey and boiled water (250 ml).

Recovery after exacerbation

The diet for pancreatic pancreatitis after an exacerbation is more diverse. If you try you will find really fun and tasty recipes from what is allowed. We eat 5-6 times a day. It is best to use steam when cooking, puree everything with a mixer, boil.

You can eat:

  • Meat with a minimum of fat (chop and cook). Cooking meatballs, steamed chops, meat casseroles. Allowed lean beef, rabbit, turkey fillet, chicken, veal;
  • Fish (you can use saithe, cod, pike, pikeperch, flounder, and other lean varieties). Cooking or steaming, steamed chops are allowed;
  • Porridge made from oats, buckwheat, semolina, rice. Barley with corn is rare. We boil in water (or milk and water in equal proportions);
  • Pasta. Don't add sauce, just olive oil, butter. Do not fry with garlic, oil, onions;
  • Dairy products. Whole milk is not recommended. Fermented baking milk, kefir, cottage cheese up to 9%, mild cheeses are allowed;
  • Egg. Just like an omelette or soft-boiled. Rarely use;
  • Vegetables. Baked, boiled, pureed, vegetarian soups, casseroles. Watch out for carrots, potatoes, melons, beets, green peas, cauliflower. You can not eat most cruciferous vegetables, mushrooms, horseradish, raw onions, spinach, garlic, beans (legumes in general), peppers, sorrel;
  • We also bake fruits, cook compotes, jelly, make mashed potatoes. Apricots, watermelons, melons are ideal;
  • Drinking dry white bread with pancreatitis, tea with savory and not rich cookies;
  • Homemade jelly, mousse. More rarely, marshmallows;
  • Still mineral water, compote, weak tea, rosehip broth, jelly.

Chronic form

The diet for chronic pancreatic pancreatitis differs from the diet for acute inflammation. The chronic "version" develops together with an acute inflammatory process of the gland, with cirrhosis of the liver, hepatitis, gallstone disease, intestinal and gastric ulcers, atherosclerosis. The menu should take into account the background of the disease pancreatitis.

The main method of treatment for you is not drugs, but a diet for chronic pancreatitis, the approximate menu of which is based on several principles:

  1. We eat six times a day, and little by little, products with a laxative effect are needed.
  2. Keep track of your daily protein intake. It takes 130 g per day, vegetable proteins need 30% of it. We recommend veal with beef, rabbit, turkey, pork with a minimum of fat, chicken and lean fish. With constant pain, the meat is chopped or cooked steamed. You should not do without low-fat fish and meat dishes: they prevent the liver from becoming fatty, which is characteristic of chronic inflammatory processes in the pancreas;
  3. The fat conversion is counteracted by homemade cream cheese (not sour and with a minimum of fat). Other dairy products are also needed. Whole milk is added to the first courses, muesli, jelly or drunk half a glass a day (if well tolerated). The fat content of the milk should not exceed 2. 5%. If you're feeling comfortable, let's say cheese (a bit) with a minimum of fat and mild varieties. Don't forget about kefir and fermented baking milk (homemade is the best option). There is no need to eat flavored and starchy yogurts bought in the store: here it is of little use;
  4. Eggs. Whole are not recommended. Eggs are acceptable as an accompaniment to other dishes, in the form of a steam omelet (protein), whipped proteins in other dishes;
  5. Vegetable proteins. We look for them in rice, pasta, yesterday's bread, oatmeal, semolina, breadcrumbs, buckwheat. Legumes are prohibited;
  6. Fats. 70 of these should be contained in the patient's diet, 80% should be of animal origin. They are properly consumed with other foods and dishes. Before eating, put butter in ready-made porridge or pasta. Vegetable oils are permitted if they are well tolerated. Other types of fats (culinary, beef, margarine, pork) are prohibited;
  7. Carbohydrates. You need up to 350 g per day. These are honey, sugar, syrup and jam. You need to eat semolina, oatmeal, buckwheat, pearl barley, rice, pasta. From vegetables, carrots and beets, potatoes, melons (zucchini, squash, squash) are acceptable. It is better to boil them in steam or water, steam pudding is also suitable, ideally it would be to eat vegetables in the form of mashed potatoes. Don't eat them raw. Bread is allowed white, black, gray;
  8. Fruit. First of all, apples of non-sour varieties are needed. Bake compote, wipe, boil. For the latter, dried fruits are suitable;
  9. Sauces. Of all variants with pancreatitis, a bechamel sauce made from flour and milk is allowed. We do not pass the flour, add a minimum of salt;
  10. First meal. We never refuse them. Grains, vegetables, lean poultry, meat, fruit and milk soups are allowed;
  11. Beverages. In addition to the above compote, it is useful to drink fruit juices, tea with milk, mineral water;
  12. Supplements, special products. Add protein powders and vitamins to the diet;

Do not overeat, the volume of food (plus all liquid you drink) should not exceed two and a half kg. No matter how strict a diet for pancreatic pancreatitis may seem, an approximate menu must not be boring and varied.

How to organize your meals if you have a chronic illness:

  • 7 a. m. - 7. 30 a. m. Breakfast. Milk oat flakes, boiled beef, sweetened tea;
  • 9-9. 30 o'clock. Having lunch. Baked apple, steam omelette, rose hip tea;
  • 13. 00 We have lunch with vegetable soup, beef soufflé, pasta. For sweet berry jelly and compote;
  • 16. 30. Afternoon snack. Tea with cottage cheese;
  • 20. 00. We have dinner with tea and fish soufflé.

Here's a slightly different approach to diet planning. You can make the recipes varied. You need a lot of protein, more fat than in other cases. Carbohydrates are also complex.

The main features of the diet are:

  • We use protein more than our physiological norm;
  • Fats and complex carbohydrates are consumed within our norm, carbohydrates are obtained from grain;
  • Jam, cakes, pastries, honey, sugar and salt are used less than the norm.

During remission, it is worth avoiding substances that irritate the mucous membranes of the gastrointestinal tract. It's not just alcohol - skip the vinegar and any seasonings.

Diet can be varied if remission occurs. Now it is not only allowed to cook or steam food. You can stew and bake vegetables, fish and meat. Refuse to rub: it is still allowed to eat food whole. The food should be warm, but not hotter than 60 degrees. We eat 4 to 6 times per tap, with breaks between meals of up to three hours.

In numbers it looks like this:

  • Protein requirement 120 g, of which 70 g of vegetable origin;
  • The fat in the medical menu contains 90 g, a third of which is vegetable;
  • We eat 350 g of carbohydrates a day, 40 g of which are easily digested;
  • Calorie content - up to 2600 kcal.

Chicken broth for pancreatitis

Don't be afraid of boring food and tasteless vegetables. With inflammation of the pancreas, there is also an opportunity to roam culinary skills. Here are some inspiration and candy for a sample pancreatic pancreatitis diet menu.

  1. Cottage cheese casserole in the microwave. Beat 2% cottage cheese with banana with a mixer, add chopped date. We bake in silicone molds for about five minutes. Use with natural yogurt (unsweetened);
  2. Apple baked with curd meringue. Wash the fruit, remove the middle and cut in two. Beat egg whites and powdered sugar separately until they have thickened. Add 2% cottage cheese to the mixture while whipping. We stuff the fruits, bake in a normal oven (at 160 degrees) for a third of an hour;
  3. Cookies. Mix flour (6 tablespoons) with half a tablespoon of olive oil, the same amount of baking powder, warm water and a third of a teaspoon of salt and Italian herbs to taste. After rolling it into a 3 mm thick layer and piercing it with a fork, we bake for a quarter of an hour at a temperature of 170 degrees.
